I was iron deficient for almost a year before I changed my diet and lifestyle even more. It was great that I got to see the results from my blood work, so I knew I needed to up my game. Iron deficiency seems very common among people with Crohn's disease and Ulcerative colitis.  I was actually depleted of iron and had to go to the hospital several times to get it intravenously. After I realized I was iron deficient, I started fasting more. Most likely, my gut was leaking. After a year of going to the hospital once a month for an iron refill intravenously, my levels were fine, and they are still fine.

Make sure you check your iron levels and B12 frequently. I would also suggest you check your stool to measure inflammation.

I guess the more inflammation you have, the more you bleed from your intestines and the more iron you'll lose.
